The “leg end” half a ham of prosciutto is produced by removing the bone and cutting the ham horizontally, then taking the end part of the leg. The prosciutto is aged for 17 to 18 months and this part of it is particularly choice. The slices are exceptional in many respects, including in visual terms because they are fuller and more regular.
